Celebrate cold weather and a New Year with this tasty homemade Olive Garden knockoff, Tortellini Soup.
We don’t got a lot of cold, rainy weather in Southern California but this New Year, we have plenty. With winter in full swing, home cooked, fresh meals that don’t take a lot of time and are guaranteed to keep you warm is a must. What better way to ring in the New Year than with lots of homemade soup, beginning with this Italian Tortellini Soup. This Olive Garden knockoff is made from scratch in less than 30 minutes. And because my husband is wheat-free, with just a few minor changes, I’ve been able to adapt the original recipe to be gluten free as well. This is the perfect meal to warm your heart and your bones for the New Year and the winter months ahead.
2 tablespoons olive oil
1 cup chopped onion
3 garlic cloves, minced
1 tablespoon Italian seasoning
8 cups Chicken Broth
4 fresh tomatoes, diced
1 package Italian sausage
1 package frozen Cheese Tortellini
Mid Life Guru Tips:
- For gluten free, use gluten free sausage and tortellini. I found both at Sprouts Market.
- You can substitute chicken for sausage. Boil and shred a whole chicken. Reserve broth to use in soup.
- We had cheese fondue a couple days before. I had bread and cheese left over, so made a garlic cheese-bread to go with our soup. A delicious touch!!
