Being healthy is a lifetime pursuit – not a destination. This month, I will be sharing tips and information on how to be – and stay — healthy.

Do you have a hard time finding healthy breakfast choices?

Thanks to Simply Quinoa, look no more. This recipe for Strawberry Coconut Quinoa Overnight Breakfast Parfait is a great choice. It is easy to make. Full of rich superfoods. And because it is made the night before, it is perfect for a rushed, on-the-go kind of morning.

Strawberry Coconut Quinoa Overnight Breakfast Parfait

  • 1/2 cup cooked quinoa
  • 1/4 cup chia seeds
  • 1/4 cup hemp hearts
  • 1 teaspoon vanilla extract
  • 1/4 cup of maple syrup
  • Pinch of cinnamon
  • 1 1/2 cups full-fat coconut milk (low-fat also works but doesn’t have as full of coconut flavor)
  • 2 cups sliced strawberries

Mix all ingredients in a large jar and put in refrigerator overnight.205

Separate in to two serving dishes, layering with fresh strawberries. Enjoy.209
