Thanks to Simply Quinoa, look no more. This recipe for Strawberry Coconut Quinoa Overnight Breakfast Parfait is a great choice. It is easy to make. Full of rich superfoods. And because it is made the night before, it is perfect for a rushed, on-the-go kind of morning.
Strawberry Coconut Quinoa Overnight Breakfast Parfait
- 1/2 cup cooked quinoa
- 1/4 cup chia seeds
- 1/4 cup hemp hearts
- 1 teaspoon vanilla extract
- 1/4 cup of maple syrup
- Pinch of cinnamon
- 1 1/2 cups full-fat coconut milk (low-fat also works but doesn’t have as full of coconut flavor)
- 2 cups sliced strawberries
Mix all ingredients in a large jar and put in refrigerator overnight.
Separate in to two serving dishes, layering with fresh strawberries. Enjoy.
