Carrot Cookies – An Easter Treat

Moist and Delicious, these Carrot Cookies are my new favorite Easter Treat.

Ten years ago, I was introduced to Liz Edmunds, The Food Nanny. Her three sisters have lived in my area and were friends of mine. Two of the sisters—Jan and Jill — hosted, along with my local Church congregation, a meet and greet to introduce Liz and her business. The Food Nanny was getting ready to expand to a television show on BYU TV and Liz wanted to come and share some of her popular recipes as well as her philosophy on the importance of family dinners as a trial run for the show. Her cute personality and experience with European cooking sold me on cooking even better for my family. Making her French baguettes became a staple in our family. Then you know the drill—life changes, circumstances change (like my husbands middle age food allergies) and The Food Nanny drifted out of my life.

That is until last week, when on Instagram, under “suggestions for people to follow,” up popped The Food Nanny. I clicked and now I’m hooked — again!!! The ten year later version of The Food Nanny now includes Liz’s daughter, Lizi, (who is just as cute as her mom) and a more modern take on sharing recipes and food prep ideas through an active social media channel.

The first Instagram Stories Live I watched was their Easter dessert ideas. Their cupcakes with Swiss Buttercream Frosting and their Carrot Cookies both looked divine. I knew I had to try them for this year’s Easter Treats.

I tried the Carrot Cookies Easter Treat first. They were easy to make and oh my – they are delicious!! I couldn’t get over how moist they are. I think I have found my new favorite cookie!!

Carrot Cookies Easter Treat

Before making these Carrot Cookies, I had never heard of carrot mash before. I had some left over from making the cookie dough and didn’t want to just toss it, so I Googled what to do with leftover carrot mash.

Apparently, carrot mash is a real thing. On the Internet, it is compared to mashed potatoes and mashed sweet potatoes. I found some great ideas on how to spruce up carrot mash for a side dish by adding things like butter, cinnamon, garlic, honey, chili powder, brown sugar and even curry.

I’m pretty sure it’s the carrot mash that gives this Carrot Cookies Easter Treat their moist texture. I wonder if carrot mash could replace oil in baked good recipes like pumpkin or apple sauce?

Next up for Easter Sunday dessert are the cupcakes with Swiss Buttercream Frosting. Can’t wait!!

I’m so glad I rediscovered The Food Nanny. This Empty Nester was in desperate need of some new cooking inspiration — my old tried and true recipes were getting so boring. Another plus is that since I’m now experienced in cooking gluten free for my husband, I don’t think I will have a problem converting their recipes to a gluten free version when needed.
