Peppermint Fudge Pie

The Christmas Season has many flavors: eggnog, ginger, cinnamon, pumpkin, chocolate and peppermint. For our family, nothing says Christmas more than Peppermint Fudge Pie



I got this recipe in Junior High. I took an advanced cooking class, Hostess Class, where we planned and prepared menus for dignitaries that visited the school. We made this pie during the holiday season. A few years ago, I resurrected this recipe and it has become a family favorite ever since. Hopefully you and your family will enjoy it just as much.

Peppermint Fudge Pie
2 cups crushed cream filled chocolate cookies  (Like Oreos but I use the cheap market brand)
1/3 cup margarine, melted
4-1/2 cups miniature marshmallows
1/2 cup milk
Red food coloring
1 cup heavy whipping cream, whipped
1/2 cup crushed peppermint candy
Combine cookie crumbs and margarine. Press into a 9 inch pie plate. Chill.
Cookie pie crust for Peppermint Fudge Pie
Melt 3 cups marshmallows with milk in a double boiler or saucepan over low heat. Stir until smooth.
Marshmallows add a fun taste for this Peppermint Fudge Pie
Chill until slightly thickened.
Mix until well blended. Tint with a few drops of red coloring. Fold in whipped cream, remaining marshmallows, and candy.
Pretty pink Peppermint Fudge Pie
Pour into crust. Wrap securely with saran wrap and freeze. Place in refrigerator 30 minutes before serving.
