About the only thing I can grow in a garden with some confidence and get amazing results are tomatoes. We have the perfect location on the side of our house that gets the full sun that tomatoes just love.
I don’t want the tomatoes to go to waste, so I”ve come up with some ways to use them fast:
I enjoy canning fresh fruits and vegetables. If you aren’t familiar with canning, it is processing fruit or vegetables in glass jars to preserve for later use. Tomatoes are one of the easiest fruits to can as all you do is stuff the jars up to ½ inch of the top with peeled, fresh tomatoes; add 1 teaspoon salt; and process the jars for 30 minutes until sealed. I don’t waste my abundant crop and I can enjoy my tomatoes later for spaghetti sauce, lasagna, and salsa.

Make Tomato-Cucumber-Onion Salad
There are different variations of this old-fashioned salad. It only requires 3 ingredients plus some seasonings, and is ready in a little over an hour. The dressing is made with apple cider vinegar — a natural boost for overall good health. This salad is perfect for summer picnics because it needs no refrigeration.
2 cups grape tomatoes (or 3 large tomatoes, cut up)
2 large (or 3 small) cucumbers, sliced
1/2 cup apple cider vinegar
1 teaspoon of cracked pepper
¾ teaspoon Stevia
1 teaspoon salt
1 cup of water
1/4 cup of olive oil
Mix well and pour over veggies. Cover and let salad chill for 1-2 hours. That’s it.
