The perfect breakfast food when mornings are heating up.
I get that breakfast is the most important meal of the day. Most times, I’m just too busy to stop and make something. During the summer months, I have an even harder time fitting breakfast in because when it’s warm, I just don’t feel like eating. Thanks to Simply Quinoa, I found their recipe for Strawberry Coconut Quinoa Overnight Breakfast Parfait which is a winner for summer mornings.
Did you know that quinoa has 7 great benefits — that’s why it is a great addition to any meal, especially breakfast. I especially like that quinoa is gluten free; my husband can enjoy it too even though he is allergic to wheat.
What do I like most about this breakfast treat? It is easy to make. It is full of rich superfoods like quinoa. And because it is made the night before, it is chilled and ready to eat for on-the-go mornings.
Strawberry Coconut Quinoa Overnight Breakfast Parfait
- 1/2 cup cooked quinoa
- 1/4 cup chia seeds
- 1/4 cup hemp hearts
- 1 teaspoon vanilla extract
- 1/4 cup of maple syrup
- Pinch of cinnamon
- 1 1/2 cups full-fat coconut milk (low-fat also works but doesn’t have as full of coconut flavor)
- 2 cups sliced strawberries
Mix all ingredients in a large jar and put in refrigerator overnight.
Separate in to two serving dishes, layering with fresh strawberries. Enjoy.
